We present The Tender CAKE

Difficulty: easy
Preparation: 20 min
Cooking: 35 min
Doses for: 8 people

INGREDIENTS

Dark chocolate 200 g
Butter 100 g
Medium eggs 4
Sugar 150 g
00 flour 50 g

To prepare the tender cake, start to finely chop the chocolate, then transfer it to a pot placed in a pan with water (if possible the water should not come into contact with the bottom of the saucepan in which you poured the chocolate) and melt it, stirring constantly. Only when the chocolate has already melted, but not excessively hot, add the butter into small pieces and let it melt while continuing to mix.
Since the exact melting temperature of the chocolate is around 50 °, the butter should be added only when the chocolate is melted, making sure that it does not exceed its melting point (which is about 32 °), and thus avoiding that it separates.

Let the chocolate and butter mixture cool, mixing it occasionally, and in the meantime separate the yolks from the whites in two different and capacious bowls.
At this point add to the latter half of the sugar and whip them until a firm and frothy mixture is obtained.
Keep the beaten egg whites aside and pour the remaining part of sugar into the yolks, then whip everything at moderate speed until light and frothy mixture is obtained.
At this point with the whisk still in action pour the mixture flush by now warm chocolate and butter, and continue to beat until you get a uniform mixture.
Add the egg whites until stiff in several stages at this point: initially add about 1/3 of the egg whites, mixing with a spatula or with a whisk.

Then add the remaining egg whites this time, mixing gently from the bottom upwards.
Add the flour and mix with a spatula making gentle movements from the bottom upwards until a smooth and uniform mixture is obtained.
At this point, grease and flour a 23 cm hinged mold (so it will be easier to deform the tender cake) and pour the freshly prepared dough inside.

Bake in a preheated static oven at 180 ° for 30-35 minutes (the use of the fan oven is not recommended as it could bake the outside of the cake too much and the inside too little).
Once baked let your tender cake cool before turning it out and sprinkling it with icing sugar.

Your tender take is really easy and super yummy!
Enjoy!
